    <title>flavorful roasted pork</title>

I&rsquo;m a huge food movie junkie. Some of my all-time favorites are &ldquo;Ratatouille&rdquo;, &ldquo;Jiro Dreams of Sushi&rdquo;, &ldquo;Chocolat&rdquo;, &ldquo;Julie &amp; Julia&rdquo;, &ldquo;No Reservations&rdquo; and most recently, &ldquo;Chef&rdquo;. A common takeaway I have with all these movies is &ndash; by the end of the show, I SO want to eat whatever they cooked in the movies.<br />
<br />
If you have watched &ldquo;Chef&rdquo;, then you must know this Cuban Mojo Marinated Roast Pork is from that movie. The consultant chef in that movie is super generous to share his recipe! If you haven&rsquo;t, I strongly urge you to buy the Blue-Ray/ DVD or download it (legally). I wouldn&rsquo;t spoil the plot for you but a piece of warning &ndash; don&rsquo;t watch with an empty stomach. <br />
<br />
Whenever someone mentioned Cuban food, the first thought that came to my mind is Mojito. Okay, that&rsquo;s more like a cocktail. Truth be told, the only time I was exposed to Cuban cuisine was at this Cuban restaurant at Clarke Quay (Singapore). Cuban cuisine could be labelled as a melting pot fusion between Spanish, African, Mexican and Caribbean.<br />
<br />
The Mojo marinade used in this recipe is a popular sauce for roasted pork, made with garlic, oil, spices and bitter orange. When I made it the first time, the crust on the pork was beautifully charred to the right perfection and the meat was moist and juicy. The only improvement I thought needed was, it could do with a little sweetness as the overall taste was hovering on the sour/tangy side. But that is just my own personal preference. The recipe also did not really specify the amount of salt required to coat the pork so after 2 rounds of testing, I came up with my own measurement. It might seem like a lot of salt but if you want a piece of flavorful roasted pork, that is the way to go.<br />

This roasted pork is the star for that signature Cuban sandwich in the movie, which I will be sharing soon! On its own, it is perfect to serve over dinner, at dinner parties or even as a Christmas roast, which is just what I&rsquo;ll do this year.]]>

I know there are lots of variations of the classic Panzanella, but the for the most part, the basic recipe consists of beautifully ripe tomatoes, bread (usually stale) soaked in tomato juices, a simple dressing and plenty of seasoning.<br />

I&rsquo;m not really keen on the soggy bread thing, so I use slices of garlic bread that have been chopped and then crisped up in a pan.<br />

How I was actually feeling more satiated and full with each mouthful<br />
It really did make me enjoy the salad more, and feel satisfied with less than I usually do.<br />

Now, I&rsquo;m not saying that my life has been changed, and I&rsquo;ll no longer be as greedy as I usually am, but I do think that with practice, mindful eating is something that could help me to reduce my food intake.<br />
<br />
I&rsquo;ve started to become more aware of when I&rsquo;ve just picked up a biscuit and scoffed it, and it&rsquo;s stopped me from doing the same with 3 further biscuits.<br />
I&rsquo;ve also started to appreciate the flavours of what I&rsquo;m eating more, and to listen to my body when I want to eat something.<br />
<br />
I still find it hard to differentiate between hunger and a craving.<br />
Also, I still find that when I&rsquo;m busy, or when I&rsquo;m eating with the family at the table, I revert back to my normal habits of eating till it&rsquo;s gone.<br />
<br />
Mindful eating seems to take a lot of time at first &ndash; which is probably why i&rsquo;m reverting back to those habits during busier times.<br />
I&rsquo;m hoping that as I get more used to doing the exercises we were taught on the workshop, that amount of time it takes will reduce, so I can more easily incorporate mindful eating into every meal and snack &ndash; rather than just the ones where I have time.<br />
<br />
There is a full-day Mindful Eating course in London on the 4th October, but I can&rsquo;t make it as I&rsquo;ll be at my nieces birthday party.&nbsp; I&rsquo;m hoping there will be more courses (especially online courses) to help me delve further into this way of eating.<br />

The temperature in Chicago has plummeted recently, and I am starting to feel like a bear going into hibernation. For me, that craving often involves cheese. And I love making my own breadcrumbs for this, but if you&rsquo;re in a hurry, store bought would be fine too. The key is to not overcook the broccoli and to get a sharp cheddar cheese &ndash; everything else is completely foolproof.<br />

Just like the brussels sprout recipe I shared last week, this Thanksgiving side can also be prepped in advance. You can sautee the broccoli and assemble the gratin a few hours in advance, and then simply bake it a few minutes before dinner. In about 25 minutes total, you&rsquo;ll have a delicious side dish ready to be served.]]>

In the bowl of a stand mixer, beat together egg whites, 1 teaspoon lemon juice, and 1/4 teaspoon salt on low speed until very frothy.<br />
<br />
Increase speed to medium-high and gradually add sugar mixture, beating until stiff, glossy peaks form, 12 to 15 minutes, scraping down sides of bowl halfway through.<br />
<br />
On a baking sheet lined with parchment paper, either pipe or mound the meringue into a roughly 8 or 9-inch circle. With the back of spoon, create a crater in the centre of the circle (this will hold the cream filling after the pavlova is baked).<br />
<br />
Bake the meringue for 2.5 hours (it should be solid on the outside and appear dry). Turn the oven off and leave the pavlova in the oven overnight to cool.<br />
<br />
When you are ready to assemble the pavlova, beat the cream and vanilla extract until you have stiff peaks.<br />
<br />
Remove the pavlova from the parchment paper and place the pavlova on a serving tray. Spoon the whipped cream mixture into the centre of the pavlova.<br />
<br />
Top with the reserved strawberry/rhubarb topping (if you want, you can spoon the juices over as well but remember that this will soften your pavlova quickly so try not to allow too much juice on top of the pavlova).<br />

I spent each summer at my grandmother&rsquo;s when I was a kid, no matter how far we lived, or how difficult it was to get to that distant village.<br />
<br />
It&rsquo;s impossible to assess everything that my grandma has gave to me, everything that she&rsquo;s learned me. And just years and years later I started to understand how valuable the childhood next to her was.<br />
<br />
Far from civilization, wealth and gadgets, just with the pure nature and carrying person behind. Even then, in the strict Soviet eighties, my grandmother lived and taught me the principle that I&rsquo;m teaching my son now, bringing him up. There is nothing more important than the personality, and the little man is the real person, who should be treated like an adult, giving him complete freedom and supporting their interests and goals, not imposing his values.<br />

Visiting Wake Forest with the cousins over spring break. Pardon the fuzzy quality of the pic of Alex from the back&ndash;but I just loved her walking with her cousin like that&ndash;and since I was walking too, well, not the best picture ever. <br />
We had a fantastic time in North Carolina. Aside from the freezing rain and the fact that the kids and I all got strep throat! But that was before we got to Winston Salem, so I can genuinely and un-ironically say that we had a fantastic time visiting my brother&rsquo;s adorable family.&nbsp; (Am I the only one who wants to zerbert the baby&rsquo;s belly every time I look at the photo in the top right?)<br />

OK so more about these muffins. And this photo, by the way, is just for fun. Since Skamp photo-bombed it. I believe he was resenting the fact that the kids had gone outside to play without him, and since I take my pictures right beside the large sliding glass door that looks out into the backyard&hellip;<br />

I found the basic recipe in Yvonne Ruperti&rsquo;s One Bowl Baking: Simple, From Scratch Recipes for Delicious Desserts. This is the first recipe I have made from this book (it just came out this past winter), but guys I have practically every other recipe bookmarked. Honestly, because I have a stand mixer (and enjoy using it) I cannot really report on whether the recipes can truly be made in one bowl with very little fuss (and especially because I started with a muffin recipe&ndash;what muffin recipe is not no fuss?). But, for example, I am so excited to make her Sour Cherry Clafouti (I prefer sour cherries) that I really don&rsquo;t care if it takes me one bowl or two. The White Chocolate Cream Cheese Pound Cake is also at the top of my list. And the Double Chocolate Espresso Cashew Cookies. You get the idea!<br />
<br />
My main change to this recipe was to use &ldquo;local&rdquo; (ok just picked from Michigan since they do not grow here) blueberries frozen last summer instead of strawberries. We still do not have local strawberries, and when I made these muffins we still did not have domestic organic strawberries (that at least has finally changed thank goodness). So blueberries made sense to me. Plus I tend to prefer their stronger, more assertive presence in baked goods, as much as I love strawberries, which can get a little lost and watery in baked goods (although Ruperti says using local, freshly picked strawberries will help with this).]]>
